Slices of these festive fruit and nut loaves are a terrific breakfast on a cold morning. They have a subtle cornmeal flavor. The best part is that no kneading is required. I serve one loaf right from the oven and freeze the other or give it as a gift. --Roberta Freedman, Mesilla Park, New Mexico

Like english muffins, slices of this bread must be toasted to taste right. Grandma used to bake this in large greased cans coated with cornmeal, which added to the english muffin appearance. Today she uses non-stick pans.

I've used this delicious recipe for about 29 years. They are very good . . . much better than any store-bought English Muffins I've ever had.

Carol Forcum suggests this nutty-tasting loaf. 'There's no need to knead the dough, which bakes into a hearty bread with the texture of English muffins,' says the Marion, Illinois reader.

I've been making this bread since my college days, when I shared an apartment with five home economics majors. My family likes this best fresh out of the oven, but it also freezes and reheats well.
