I'd give this recipe 4.5 stars! I wasn't too sure about it after reading the ingredients but I had everything on hand so I thought I'd try it. I used leftover red enchilada sauce (recipe from this website) and increased the refried beans to 1 cup. Like others, I mixed the beans into the meat mixture. I topped it with a little extra cheese and the shells came out nicely!

This is a great idea and was very good! I mixed all the ingredients together, along with garlic salt and a can of chilis, and simmered it while the shells were cooking. Also, I used a whole can of fat-free refried beans, not a 1/2 cup and it was perfect. Served with a packaged Mexican rice mix and Mexican Corn (from this site). Great meal!

I used lean beef instead of turkey and I mixed the beans with the meat before filling. Next time I'll be adding guacomole on top. Great dish overall. We love Mexican food but this was a nice change of pace.

Made these last night. Nice change of pace. We love Mexican and Italian so it was a good combo. The only change I did was mix the refried beans w/ the meat mixture before adding to the shells. Topped w/hot sauce and sour cream and served atop of Mexican Rice.

Very yummy! Used lean ground beef instead of turkey (my husband doesn't like turkey). Topped with sour cream and served with mexican rice, very delicious. My husband and I both agreed that it would be even better topped with some pico de gallo and maybe a little shredded lettuce. Kids loved. Will be making it again.

I made this last night. It was easy to make. Some reviews on here mentioned that the shells were awkward to fill but I actually found them super easy to work with. Looked great in the casserole dish after being cooked and would make a nice presentation if company were over for dinner. This was DELICIOUS! I used extra cumin and left out the oregano. I served the shells over a bed of mexican rice and topped them with a little extra shredded cheese and a dallop of sour cream. My husband raved about this dish!

We made this last night but replaced the turkey with chicken (baked and then ground in the food processor). It was great!! I love italian food and the hubby like mexican food so it pleased us both!

Love this recipe! The only complaint I have is that the shells got tough after beig in the oven for so long- probably something I did wrong, but very yummy with sour cream and extra cheese! Will be making this one again!
