Enchilada Stuffed Shells

INGREDIENTS
15 uncooked jumbo pasta shells
1 pound lean ground turkey
1 (10 ounce) can enchilada sauce
1/2 teaspoon dried minced onion
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon ground cumin
1/2 cup fat-free refried beans
1 cup shredded reduced-fat Cheddar cheese

DIRECTIONS
Cook pasta according to package directions; drain. In a nonstick skillet, cook turkey over medium heat until no longer pink; drain. Stir in enchilada sauce and seasonings; set aside.
Place a rounded teaspoonful of refried beans in each pasta shell, then fill with turkey mixture. Place in an 11-in. x 7-in. x 2-in. baking dish coated with nonstick cooking spray.
Cover and bake at 350 degrees F for 25 minutes. Uncover; sprinkle with cheese. Bake 5 minutes longer or until cheese is melted.

Nutritional Analysis: One serving (3 stuffed shells) equals 379 calories, 15 g fat (6 g saturated fat), 89 mg cholesterol, 591 mg sodium, 33 g carbohydrate, 2 g fiber, 28 g protein. Diabetic Exchanges: 3 lean meat, 2 starch, 1 fat.

I searched for this recipe, my sister in law made something similar for my hubby when he lived with her for a couple of years (shes kinda a mother to him and she can do no wrong) well, he said mine was better... mine also had 1/2 the fat because I used ground turkey without telling him :)... wow i never realized how good ground turkey would be, tastes just like ground beef he didn't even know the difference. It is also 1.50 a lb in the freezer section which is a huge plus! I used a full can of refried beans and mixed them with the meat mixture to make it more simple.... I also added a tsp of chile powder. I used a cookie dough scoop to fill the shells and it made it REALLY FAST and easy. Make sure you cover the dish when you bake it so the shells don't get tough. Fyi if you do decide to do extra beans (i recommend it) cook extra shells because you will have extra filling. It freezes really well too! Its great with a dollop of sour cream and some salsa... take a scoop of lettuce and a whole bite of stuffed shells and it tastes like the best tacos you've ever had!

This is a great idea and was very good! I mixed all the ingredients together, along with garlic salt and a can of chilis, and simmered it while the shells were cooking. Also, I used a whole can of fat-free refried beans, not a 1/2 cup and it was perfect. Served with a packaged Mexican rice mix and Mexican Corn (from this site). Great meal!

Love this recipe! The only complaint I have is that the shells got tough after beig in the oven for so long- probably something I did wrong, but very yummy with sour cream and extra cheese! Will be making this one again!

Excellent!! Made as is, except I added the refried beans to the meat mixture along with diced onion and jalapeño and I poured extra enchilada sauce over the stuffed shells before baking to prevent the pasta from getting dry. After baking, I sprinkled with fresh cilantro and added some sour cream and this was a hit!! Leftovers were really good too. Will make again, it was a nice variation from regular enchiladas!

very good meal. I didnt have shells so I used bowtie noodles. Of course that meant I didnt stuff them. I also didnt bake them. What is the reason for baking it anyway??? Just melted a little cheese over the top and put a dollup of sour cream on top. GREAT!

These turned out pretty good. I used ground beef instead of the turkey, use a whole can of refried beans and mixed it with the meat mixture before stuffing shells. I think it could have used a little more spice - maybe some chili powder. Nice with a little bit of sour cream. I served these with a garden salad and tortilla chips and salsa.

I used lean beef instead of turkey and I mixed the beans with the meat before filling. Next time I'll be adding guacomole on top. Great dish overall. We love Mexican food but this was a nice change of pace.

Made these last night. Nice change of pace. We love Mexican and Italian so it was a good combo. The only change I did was mix the refried beans w/ the meat mixture before adding to the shells. Topped w/hot sauce and sour cream and served atop of Mexican Rice.
