1 pound ground beef
1/4 cup chopped onion
1 garlic clove, minced
1 (8 ounce) can tomato sauce
1/4 cup water
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
4 (6 inch) corn tortillas
2 cups shredded Cheddar cheese

DIRECTIONS
In an ungreased 2-qt. microwave-safe dish, combine the beef, onion and garlic. Cover and cook on high for 5 minutes or until meat is no longer pink, stirring once; drain. Stir in tomato sauce, water, chili powder, salt and pepper. Cover and cook on high for 8 minutes, stirring once. In an ungreased 1-1/2-qt. round dish, layer one tortilla, 1/2 cup meat sauce and 1/2 cup cheese. Repeat layers three times. Heat, uncovered, on high for 1 minute or until the cheese is melted.

This recipe was tested with an 850-watt microwave.

I did an ingredient search and came up with this recipe. I did however cook the ground beef on the stovetop and bake the casserole in a 350 degree oven. I really don't like cooking in a microwave. I added just a bit of corn and it was really good. This is a good, easy, quick weeknight dinner. I served with mexican rice.

This was great! Plenty for two servings and one lunch to take to work. I added some seasoning salt, and I ran out of cheddar, so I supplemented with jack cheese. I didn't realize it's a microwave recipe. I baked it for 20 minutes. My husband dabbed sour cream and salsa on the top, and if I'd had an avocado, I bet a few slices would have been good with it. This one goes in the permanent collection.

I have been making these stacked enchiladas since I was a little girl in the 70's! Of course, I didn't learn to do them in the microwave back then, so I stick to the oven when cooking them. I believe I did tried them in the crock pot once, a little messy, but still good! No matter how you cook them, they are delicious!

I give it five stars because it was fast, easy and good. I didn't have tomato sauce on hand, so I replaced it with tomato paste and salsa instead. This recipe will become a new staple for the nights I come in from work and I'm too tired to put tons of effort into a meal.

I made this for my husband's company potluck. Personally, I am not a fan but I'm very picky. Everyone else ate it and wouldn't let me take the leftovers home!

This was pretty tasty. I used a can of enchilada sauce mixed in with the meat to save time and we topped it with some sour cream. My 3 year old asked for seconds and she NEVER does that!

Cooked it on the stove & then put in the oven for about 20 minutes!! Very easy, kids & hubby loved it. I had everything on hand and will cook it again. Next time I am going to use ground turkey and see how that turns out. Very yummy!!

It was okay. Good for a quick and easy meal. I was looking for something in particular and this seemed really close, but it wasn't it. Still was a decent recipie. Not sure if I'd make it again though.
