The family loved this even though it was slightly spicy. I used pre-made enchilada sauce and it was a little too spicy for our taste, but will definitely make it again.

Excellent!!! I used canned enchilada sauce. Also added a can of extra hot rotel (green chilies and tomatoes)and doubled the cheese. I used 15 tortillas. My entire family loved it!!! Can't wait to make again.

I used chicken instead of beef. Also used large can of green enchilada sauce. I put a third layer of tortilla on top too. Very tasty and simple.

This should really be called a Burrito Casserole since Enchiladas rarely have refried beans in them. We felt the beans added an undo heaviness to the recipe. I baked the tortillas beforehand and still felt they turned out too mushy. Will keep searching for a better recipe.

This was a great recipe. My husband loved it. To I also just used the canned enchilada sauce, also substittued fat free chedder chesse. Was still delicious, just with less fat.

I loved this dish. I made my own enchilada sauce though. I added a layer of cottage cheese with the shredded cheese and roasted poblano peppers. I served it with sour cream, chopped onion, chopped tomato and salsa. For a side dish, I made spanish rice with Goya Sazon and a salad.

This was GREAT! I made it tonight and I thought I'd have leftovers. Wrong! Between my husband and my son's 8-year-old friend, it is all gone. They both had 3 servings. Like other reviewers, I modified the recipe slightly and used 3 cups of cheese and a 28 oz. can of enchilada sauce versus the tomato paste, etc. I also used taco seasoning mix, with a little extra cumin. This will become a regular dish in our home.

Awesome casserole. I too, like many others used the canned enchilada sause. I was afraid of using to much as my 4 year old was going to be eating this too. And didn't want it to be to spicy for him. So I just slapped on extra sour cream on his. I also tried it with ground Turkey instead of beef. Even reheated this is good. Definately a keeper!

It was very good. I did subsitute the powder enchilada for canned, and put taco seasoing instead of the garlic and onion salt. Even my 2 1/2 year old and husband ate all what was on their plate!

Excellent, easy recipe. The only thing I would change is to double the sauce recipe because it didn't seem to be enough and the casserole was a little dry. Doubling the sauce recipe should fix that.

So easy to make and so good. I did cheat and use canned enchilada sauce. If you use canned sauce, you'll probably need at least 20oz. or more. This is a new family favorite!

I cooked the tortillas in oil first I also used canned enchilada sauce and added a packet of taco seasoning can of rotel, half a chopped onion and some cumin to the meat. It was so good everyone in my family love it thanks for the great idea.
