Empanadas I

You have a choice of two fillings: a spicy, cooked fruit filling or a savory meat filling. Either can be tucked inside rounds of pastry that are sealed into tight packets and baked in the oven. They make a great picnic treat or a delicious, casual supper. 

Pork Empanadas

Tender pork turnovers. Filling can be used for almost anything else, such as taco filling. Can be frozen baked or unbaked. If baking from freezer, do not thaw. Bake in preheated 350 degree F oven for 25 to 30 minutes. Reheat baked frozen at 350 for 15 minutes.

My original version for the Argentinean recipe. Rich and delicious. Any meat can be used for this recipe, just be sure to cut it up into tiny pieces.

Better make plenty - these disappear fast. The unbaked dough may be frozen. The baked cookies may also be frozen.

I love banana empanadas and I wanted to see if I could make them. This is what I came up with and I wanted to share. They're pocket pies. You can make them with other fresh fruits (peaches, apples, apricots, pears, etc.) or with canned fruit filling. The good thing about bananas is that you don't have to add any sugar and the empanadas still taste great.

These Chilean empanadas are filled with queso chanco, a Swiss-type cheese, and can be either baked or deep-fried.
