INGREDIENTS

  • 1 cup butter, softened
  • 2 cups brown sugar
  • 1 cup white sugar
  • 1 1/2 cups peanut butter
  • 2 teaspoons vanilla extract
  • 3 ripe bananas
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
  2. Stir together the butter, brown sugar, white sugar, peanut butter, and vanilla in a bowl. Mash the bananas into the mixture until there are few lumps. Sift together the flour and baking powder in a separate bowl; add to the banana mixture and stir until thoroughly incorporated. Drop rounded tablespoons of mixture onto the prepared baking sheet.
  3. Bake in preheated oven until lightly brown and firm, about 10 minutes.

I made these cookies for my boyfriend who is obsessed with Elvis. They turned out good, although the banana taste was a bit overpowering. I made a second batch with a half banana less and I added milk chocolate chips and those tasted great!

I'm going to make these for my dad's birthday because he's obsessed with Elvis; I tried them out and they're great.

I have also been searching for banana cookie recipe with the taste of bananas. This is the one. For those wondering about the name, I would guess these are named after Elvis' favorite snack, peanut butter and banana sandwiches.
