Elderberry Pie I

Keep an eye out for a farm stand offering elderberries and rush back home to make this amazing double-crust pie. The fresh berries are combined with seedless grapes, brown sugar, a bit of flour and cinnamon, and then the mixture is doused with vinegar before the whole thing is baked in a hot oven for 45 minutes.

The berries in this wonderful double-crust pie are doused with lemon juice for a little zip. Sugar, flour and salt are sprinkled over the glistening berries, and the top crust is sealed and fluted. It 's then plopped into a hot oven and baked until the crust is golden.

A not-too-sweet and fruity pie. Saskatoon berries are known as serviceberries in the United States. This berry has often been compared with blueberries though it has more of an apple flavor.

This is a wonderful double-crust pie piled high with fresh raspberries. The berries are sugared and sprinkled with tapioca and cornstarch, and arranged in a prepared crust. Pats of butter go on just before the top crust is added, and then the pie is baked until the juices bubble up and the crust is golden brown.

This recipe is pretty straightforward: blackberries, flour, sugar and lemon juice are combined and piled into a pastry shell. On go a few pats of butter and the top crust, and 45 minutes later, you 're in pie heaven.

Aunties Wild Huckleberry Pie

Huckleberries, brown and white sugars, tapioca, and apple cider vinegar are stirred together and poured into an unbaked pie shell. The filling is dotted with butter and the pastry top added. This wonderfully sweet pie bakes in about an hour.
