This wasn't bad at all. I put the tomato sauce and cheese on top and put it all back under the broiler to melt the cheese. I think next time I will peel the eggplant. Maybe its' just me, but the peel is so tough. I will make this again.

I omitted the margarine and threw everything in the crockpot on low. The flavor was very good for such a simple recipe. Thanks for the recipe.
