Delicious and very easy to make. My husband and I loved it - our kids ran at the mere mention of "eggplant" so they didn't really give it a fair shake. I made it a second time and because I forgot to buy ricotta cheese, had to substitute cottage cheese instead and we agreed we liked it even better that way. Reheats well.

Great! My first time eating, or making Eggplant Parmesan and it turned out wonderful. Like the recipe says, it's a great meal with some garlic bread and a salad. Even apprehensive Eggplant avoiders will give it a try, since it looks, and smells so wonderful.

This was my first time both eating and making Eggplant Parmesan. I omitted the salt sweating process and simply fried the unpeeled eggplant in peanut oil and proceeded with the recipe. It was absolutely delicious. I didn't know what I'd been missing, and if you are a food combiner, this is perfect for your diet.

I have made this recipe a few times and it was a hit!! My children who usually don't "think" they like eggplant loved it! I made it for friends at a get-together and they said they didn't know eggplant could taste so good!!!

This is wonderful! Although the recipe does not say, I peel the eggplant first. I still bread and fry it to make it really tender. Definately a keeper!

This recipe was very good. The second time I made it, I browned some ground beef with onions and mushroom and mixed them with the canned marinara sauce. I also didn't fry the eggplant the second time and it still came out great.

yummy. thought i didn't like eggplant, guess i was wrong. i used a mister to mist olive oil into my skillet. i don't think that my eggplant was too greasy because of that. overall this was a hit with my family and will definetly be repeated.

This was the best eggplant parmesan! Everyone loved it! The only problem I had was that I made it on a 96 degree day...and no air conditioning in the kitchen!! Other than that I give it 10 stars!!

Great recipe! I am new at cooking eggplant, I've only had it at restaurants, and this is a very easy recipe to follow. If only I could get my kids to eat it, though! (They are very picky!)

Delicious recipe! I made it for my boyfriend and he had 2 helpings at dinner and then took the rest for lunch the next day....I cooked it again later that week and it was just as yummy. I used Barilla lasagna and casserole sauce. I suggest using a nonstick pan to cook the eggplant and add oil a little at a time because the eggplant soaks up oil fast and if you put it all in at once then the first batch of eggplant will soak it all up.
