INGREDIENTS
2 cups all-purpose flour
4 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
2 eggs
1 1/2 cups eggnog*
2 tablespoons butter or margarine, melted

DIRECTIONS
In a bowl, combine the flour, baking powder, salt and nutmeg if desired. In another bowl, beat eggs, eggnog and butter; stir into dry ingredients just until moistened. Pour batter by 1/4 cupfuls onto a lightly greased hot griddle. Turn when bubbles form on top; cook until second side is golden brown.
FOOTNOTE
This recipe was tested with commercially prepared eggnog.

This is am excellent recipe!! I always make Eggnog pancakes during the holiday season.. The only thing different i do is add the extra 1/2 cup of eggnog like the other reviers suggested. Me and my twins love this recipe!!!!!!

These pancakes were fun. While I wouldn't particularly run out and buy eggnog to make these, I would happily recall this recipe to use leftover eggnog. I too, found the batter to be very thick, and I burned the my first batch. I added more eggnog, the batter was still fairly thick, but it held its shape while I rounded it about with the edge of my measuring cup. Maple syrup was good, but is perhaps too sweet, and I think a strawberry topping would be a better choice. I can picture these as making one heck of a special waffle and might try that instead!

This is a good recipe... I sifted the dry ingredients to help it not be too dense, since eggnog is so thick. The eggnog flavor is very subtle - almost understated, but nice. A full recipe will make about 12 1/4c. pancakes.

Made half a recipe with 1/2 tsp of cinnamon instead of 1/4 tsp nutmeg (personal preference) but otherwise I changed nothing. Made waffles instead of pancakes and they turned out fantastic - wonderfully risen and with a delicate eggnog flavor. Great recipe for using up that extra eggnog in my fridge!

this recipie is awesome. i found the pancakes to be rich and filling, with a great aroma of eggnog. i brought these babies to work and my co-workers went crazy. i can't wait to make it for my dad who's favorite part of the holidays is eggnog.

These were really good. Cut the recipe down to 3 servings. They are so light and fluffy, and I used half whole wheat pastry flour. I used Organic Valley egg nog, and was short 2 tablespoons, so I used skim milk to make up the difference. The batter was so thick that I added a few more splashes of skim milk to thin it out a little. I added extra nutmeg too. Vintage is right, maple syrup does help bring out the eggnog flavor. My kids helped me make these; one stirred the dry ingredients together while the other stirred the wet. I made mini pancakes for them and they just loved them! Great recipe.

Hubby & my grandsons made these pancakes for breakfast thsi morning. They added a bit more eggnog & then some water to thin it out some. The eggnog flavor was subtle & I was afraid it would be masked by maple syrup but strangely enough, it helped bring the eggnog flavor out. Thansk for a tasty seasonal breakfast...we enjoyed it!

My husband and I are both big fans of eggnog and look forward to enjoying it every year. We were equally pleased with these pancakes and enjoyed the eggnog flavor. The best part is that the eggnog (even with the 1 1/2 cups) was a lot, it was not overpowering! Will use this recipe again!! We used Oberweis eggnog, very thick, it made about 9 pancakes.

These may have been the best pancakes I've ever eaten! They were very fluffy, and light, but not too light. The texture was fabulous. The taste was wonderful! I doubled the recipe and had more than enough for my family of 5 (3 of which are little boys) with plenty leftover for breakfast in the morning! I used 2 cups Southern Comfort non-alcoholic eggnog and 1 cup whole milk. It turned SO yummy. I'll be making this again!
