These puffed up a lot when they were cooked. I rolled mine to about 1/8 inch and they were still VERY thick. They were like noodle dumplings...which were kind of tasty, but not what I was expecting. After rolling these out, I hung them on a coat hanger to dry.

This is my recipe that I have used for over 50 years.!!! But now I change it by adding either beef or chicken base from Cosco or Sams to the dough mixture and get even a better flavored noodle. All time favorites for my friends and family BARBARA

I didn't read all of the reviews but I use a pasta machine to "roll" my noodle dough out. It works so easily and my noodles are all the same thickness.

These were just the right flavour though I think I will need to learn how to make them not quite so tough or thick. Otherwise. They were a hit for supper!

Just like my mom used to make! I halved this recipe and it fed 3 with no leftovers. FYI, I rolled mine rather flat - about 1/8 in. I also made them narrow, not wide, and rather short too. I tried the Swiss roll method, but the pizza cutter was much faster. I allowed them to dry for only 30 min., but I remember my mom drying them for up to 3 hours. I cooked them in salted water with a little EVOO and they were done in about 3-4 minutes. They rose to the top of the boiling water when they were done.

WONDERFUL! I used my mixer with the dough hook and my pasta machine to roll and cut them. So easy. Three of us ate them all with no leftovers! I'll definitely make them again with absolutely no changes.

I make these noodles every time I make chicken soup. I want to try to make some stroganoff with them sometime as well. I never realized how easy homemade noodles are to make - and it's definitely worth the little extra effort!!

This is a great recipe! I had never made egg noodles or any kind of noodles before and these turned out great! I will definetly make these many more times. One tip I have is to make sure your surface is generously floured before rolling out or they will stick to the counter. Happy Cooking!!

This was my first try at making homemade pasta and I was very pleasantly surprised by how easy it was and how good they were. I will definitely be hard pressed to go back to store bought noodles. I used these in chicken noodle soup and served them with beef stroganoff....and they were a big hit! Used my KitchenAid with dough hook to mix and that worked great....I have now purchased the pasta roller attachment since I plan on making more pasta in the future!

LOVE IT! This recipe is very simple to make and tastes so good. To save on time, I dryed out my noodles in my toster oven on low for a couple of minutes instead of leaving them out to dry. This recipe was great with my homemade turkey noodle soup. Thanks =) ~Candy~

This recipe is excellent. A few changes, I froze the dough for 20 minutes and added extra flour on top before putting it in boiling water. These noodles have to boil for about 20-25 minutes, so they are not as gooey in the middle. I cut them into about 1/2 inch squares because they fluff up in the boiling water. I added these noodles to the chicken noodle soup recipe I found on allrecipes.com. I made this recipe in 1 hour. I will use this egg noodle recipe for future gnocchi meals as well.
