We loved this recipe. It did taste a lot like an eclair! My 3 year old son actually did most of the work...very easy and loved that it is no-bake. Great for summer barbeques. Made my own fudge icing, which hardedned nicely in the fridge and then softened slightly at room temp: 1cup sugar, 1/2 cup cocoa powder, 1/2 cup milk, 4 tbsp butter, 2 tbsp lt corn syrup, dash of salt. Boil together in saucepan 3 minutes,then add 1 tsp vanilla and 3/4 to 1 cup powdered sugar. it will pour right over the cake. will definately make this again for a crowd!

Outstanding!! It was shockingly easy to make and the end result was delicious! It is a very sweet cake though. I might try it again with a dark chocolate frosting. Thank you for posting this recipe. It's a no-fail!

This one gets 5 stars because of taste, presentation and being quick and easy to prepare. I usually try to avoid "shortcut" ingredients, especially when having guests over.... but sometimes you just don't have time to do something fancy (I have two kids under 2)and this is always enjoyed by all. AND I can remember it without having to look at the recipe :)

I've made this for both home and office parties and everyone loves it. However the "ready" time is far too short. 1. If using a disposable cake pan you will need more than 1 box of graham crackers. It will take about 1 more package of crackers. 2. Because the pudding mixture thickens so very quickly, open the graham crackers packages and put on a tray, etc so you can quickly grab and place them. If you don't, by the time you get to the second layer the pudding mix will be difficult to pour. 3. Using a wisk, quickly mix the pudding and milk for a few seconds and then add the cool whip continuing to mix. Make sure the cool whip is completely mixed in. 4. Microwave the icing (I use Betty Crocker creamy chocolate) for about 30 seconds, stir and then pour over the top layer of crackers. 5. Give the graham crackers time to soften. If making for lunch or dinner, make cake the night before. I haven't tried it yet but was thinking that this might be good with a chocolate pudding/cool whip mixture for the filling with vanilla icing as the topping.

I've been making this for years and it's always asked for when I have a office party. The only difference is I microwave the frosting (dark fudge is what we like) for 30 seconds, stir until all melted and then pour it all over the top. It's quicker and alot easier. I have used cheesecake flavored pudding and it's great too.

This is yummy! I did follow the advie of others and microwaved the frosting and poured it on, then refrigerated it. Thanks for a great recipe that's fun and quick to put together! I'm sure other flavors of pudding and frosting would be great to try too--there's some new holiday puddings with butterscotch or mint bits in them.

Amazingly easy, inexpensive and delicious! I am not a big fan of reviews that reinvent recipes but I would like to suggest a few things. Using french vanilla cool whip made the filling even more vanilla custard like. Also, we heated the chocolate frosting slightly in the microwave and only used half a can, but that's personal preference. My 15 year old made this, with a little help but her cooking skill is NOVICE, for Christmas, with rave reviews from everyone.

My roommate made this for a Christmas party, and I thoroughly enjoyed the leftovers. She did use French Vanilla pudding, and I think that makes all the difference, along with a long refrigeration time. Divine.
