This is a traditional South African recipe, which comes from the great culinary tradition of the Cape Malays -- originally brought in as slaves in the 17th century. A simple dough of flour, salt, white pepper, nutmeg, eggs and milk is pressed through a spaetzle maker or a sieve to produce strands of dough. Boil in water or broth a few at a time until they float, then saute in butter and sprinkle with fresh parsley.

This is very easy recipe, with basmati rice and green peas. It is very mild and fragrant, and great as a side dish, or for those picky kids who don't like their peas. The word 'matar' means green peas in Urdu.

To make a quick and easy meal, cook farfalle pasta in water flavored with chicken bouillon, then toss the hot pasta with a bit of butter and some sweet green peas. Add a few red pepper flakes if you wish, and garnish with parsley to serve. 

Seasoned Rice

Basmati rice is heated with soy margarine, nutritional yeast, garlic and basil to create a light, flavorful side to accompany any meal. Stir in a cup of your favorite steamed vegetable, if desired.
