Chinese Chicken Salad I

First comes the sweet and sour sauce and a bit of ginger in a bowl. Next romaine and bean sprouts. Then the shredded chicken. Give it a stir and you have a remarkable luncheon entree. Top with almonds and a good sprinkling of ground pepper.

Ginger, peanut butter, hoisin sauce, brown sugar, chili paste, rice wine vinegar and sesame oil make up this wonderful dressing. What we love are the fried wontons tucked inside the chicken salad.

Chicken breasts marinate overnight in orange juice, soy sauce, and lemon/lime carbonated soda. These are then grilled, cut into strips and mixed with lettuce, tomatoes, and mozzarella, and a tasty garlic infused lemon and oil dressing.
