This was delish! I followed some of the suggestions in previous raters. I used a serloin tip. I used a can of Campbells Consomme and a can of French Onion soup and a dark mexican beer. I seasoned the roast with garlic powder, paprika, and pepper and added just a little worchestershire sauce. For two people, I used a 2 pound roast and there is plenty left over for tonight and french onion soup tomorrow. This is the best recipe I have found on this site!!

The only reason I gave it a 3 star is because the meat was actually edible. But this recipe was tasteless. I am going to put it back in the crock tonight with potatoes and carrots.

A Very comforting dish! I didn't have a beer so I used broth in its place. As someone suggested I added 2 TB kitchen bouquet and a little more salt. It was very good.

I would give this ten stars if I could. To this recipe, I added...NOTHING! Had this at my daughter's this weekend and thought I died and went to heaven. We made sandwiches with the beef on buttered soft rolls and used the juices for dipping. The beef was so tender you could cut it with a fork. The juice was out of this world. Next time, I'm taking the juices, adding a hunk of bread at the bottom, throwing some mozeralla cheese over it, broil it and making a French Onion Soup of this to die for! Excellent recipe either way!

Spectacular! The type of beer you use, really does make a difference...I didn't have the french onion soup, so I just used a packet of dry onion soup mix and added water. Also, I added some garlic and parmesan to the rolls before baking. Update-Used dry onion soup mix again, added water without measuring. Spooned in some beef bouillon base, added more water, then a half of a large bottle of guinness stout beer, garlic powder, onion powder and worcestershire sauce. Melted cheddar and dubliner cheese with garlic on top in the oven...wow!

This was a good recipe and so easy. Used 6 pounds of chuck roast and cooked for 8 hours. I added garlic to the crockpot for extra flavor. As many reviewers suggested, after slicing the meat, I put it back in the juices and let it sit for 1/2 hour after turning the crockpot off. Broiled provolone cheese on French Rolls; I think this is better than butter. Served roasted garlic potatoes, tossed salad and the "ratatouille" recipe on this site...perfect blend of flavors.

This is absolutely delicious! I forgot to pick up a can of beer, so I used a little white cooking wine instead. The meat was so tender, it just fell apart. I did season the meat before cooking with some garlic salt and pepper. The flavor was awesome. I toasted the bread and put a slice of provolone on top. So easy, yet so good! My husband was in heaven! Thanks for a great recipe.

OH MY GOSH!!!! Absolutely delicious! My 5 year old will eat hardly anything for dinner and gobbled this up and said that Mommy was a good cook (the sign of a really good recipe). I added Guinness, Montreal Steak Seasoning and a few dashes of Worstershire Sauce per others suggestions. A definite keeper.

Definitely a keeper! I added a dash of worchestshire sauce, along with some steak seasoning. Great flavor, and I will be making this again. It makes a lot, so next time I'll probably do it when we have company. It's pretty filling, especially when you have it on a hearty bread, so in our house, we got a lot of mileage out of it.

We thought this was really good. We followed the recipe exactly since it was our first time making any kind of french dip. It made quite a bit for just us two, definitely had leftovers for another nights dinner. The only changes we would make next time is to add some more spices, and to add some fresh onions to give it more of that onion taste. Very versitile recipe.

Wonderful! I've also tried it with white wine instead of beer and is equally as good if not better. I use eye of round roast b/c its leaner. Delicious!!! Going into regular dinner rotation!!!

Unreal!!!! This is a top notch dinner and so easy you feel like your cheating. I couldn't find french onion soup for the life of me, so I used a french onion soup dip packet and thought it would add more flavor then the soup anyways, and it does. I added garlic as well. The beer is what makes it super tender and melt in your mouth good... so don't shy away from it. You don't taste it at all. Remember to use the yummy left over juice in your crock pot as your dipping sauce. I never start in time to do a 7 hour anything... So I put it on High for 5 hours and it was just as good. This will be a recipe that you use over and over and over again... TRUST ME, ITS THAT GOOD!

Mom makes this for a easy meal when we all get together, everyone loves it. Like suggestions to add garlic, will try that next. Great meal to take RV camping.
