I never would have thought of using salsa with meatloaf. This was outstanding! I ate it with dinner rolls and garlic seaoned potatoes. My next batch i'll add hot salsa! My daughter (LOL) said " daddy this don't look good", then added ketchup and said "now that's better".....she had two servings!

The appearance was unappealing and much more cooking time was needed. Although there was not any leftovers, I will not make again.

It was really easy and one my family likes the most. It is even better when it makes a meatloaf sandwich the next day.

great recipe, my family and I loved it. I used a fresh salsa made at a local restaurant and the end result was very good. I will definitely add this to our meal rotation.

This was good! We used ground venison instead of beef, and it still turned out juicy and yummy. It smelled great while cooking, too.

We loved this meatloaf. I made it 2 weeks ago and my husband asked me to make it again. It's in the oven!

Yummy. I've made this before but I changed the recipe quite a bit this time because I'm on a diet. Instead of ground beef, I used ground turkey. I also added in mostly fresh salsa (nice chunks of onions and jalapenos in it), and 1 tablespoon pace salsa for more flavor. I grated onion (only a little) and one zucchini then replaced the bread crumbs with finely crumbled whole wheat bread. I used an egg white instead of a whole egg. I didn't expect it to turn out all that great but it was delicious! didn't need any cheese at all. :)

I used lean ground beef and turned it up to 375@, and cooked it for 45 minutes. Also I added three eggs and 1 and 1/2 lbs. beef. Used V-8 spicy instead of salsa, made two big loaves. Saving one for tomorrow's meal. Thanks DrIgis..

This was so easy and a big hit with the kids. Like other reviewers I added a bit more fresh salsa, it made a big difference. I also used Rotel diced tomatoes with cilantro and green chiles which added a nice kick. I would double this recipe next time for yummy leftovers.
