  1. Place potatoes into a large pot and cover with salted water. Bring to a boil, then reduce heat to medium-low, cover, and simmer until tender enough to pierce with a fork, about 30 minutes. Drain and allow cool, then peel and dice. Place the diced potatoes into a large mixing bowl and refrigerate until cold. Once cold, fold in the mayonnaise, celery, eggs, chicken, mustard, olives, salt, and pickles. Refrigerate 2 hours before serving.

This recipe was a really nice change from the traditional potato salad, and fun to decorate with olives and serve, but I had to knock off a star because it has too much mayo and not enough olives. Also, since this is best served with 'medditeranean food' I used greek olives along with green olives for an extra kick. Very good thouigh, especially on pita/ flatbread!

Every Russian family makes Olivyeh a little different, but this is definitely not it!

they forgot a can of sweet peas! i've never heard of olives going into olivieh! that isnt russian!!

This is NOT Russian Olivieh! If you want the authentic Olivieh, look in 'Russian Potato Salad' recipe. That one is pretty authentic. Just use bologna instead of hotdogs and add boiled carrots, chopped up.

Pretty good. Very easy, too. I didn't measure the mayo, but what I used did not equal what the recipe called for. It doesn't need that much mayo, and I added more olives. This is good just eating on the plate--forgot the pita bread this time, but I'll eat the leftovers with pita. Thanks

Ummm, not quiet the same as a 'traditional' one we eat at home. It tasted ok just wrong claim to fame:)

This recipe is no olives. There peas. And celery either.
