Directions

  1. Place chickpeas into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain chickpeas and pat dry.
  2. Preheat oven to 400 degrees F (200 degrees C).
  3. Toss chickpeas, olive oil, and salt together in a bowl until evenly coated; spread in single layer on a baking sheet.
  4. Roast in the preheated oven, stirring every 8 minutes, until chickpeas are browned and crisp, about 40 minutes. Toss chickpeas with more salt and cool completely.

Tasty snack! I wish I wasn't so busy while making these b/c I would've cooked them a touch less, as I felt they were a bit too overdone, but maybe that's just my oven. Also, if I didn't have the dry beans on hand (which I happened to this time), I would just use canned. That way I don't have to 'plan' on making them, lol. All in all, a nice treat that I can feel good about! Thanks for sharing. :)

I tried this recipe this very afternoon and followed it almost exactly except I added a little ground cumin and Garam Marsala spice! AWFUL! I wound up with a cookie sheet of totally uneatable pebbles. Actually, I lost a filling attempting to eat one of these Roasted Chickpeas. I was really looking forward to this but can not believe the outcome ! ! !
