Wow, these things are addicting and so much easier if you cheat and use a spice cake mix like previous reviewers suggested! I was going to make these with the spices indicated, but I only had one - and they were too expensive to purchase them, so Spice Cake mix was used and these are amazingly delish! DON'T put ANY eggs or oil or anything else in these - they are *supposed* to be very dense. You can even make these as cookies if you so desired. I have my friend and her husband addicted to these, just like me!

Nice pumpkin flavor. The batter did look a little strange and I think there are cake mix clumps, but overall very easy and tasty.

I didn't have pumpkin on hand, so substituted organic sweet potato puree. I also added chopped pecans and white chocolate chunks. They were very flavorful and of a decent density when warm and right out of the oven. However, a few hours later after total cooling they became too thick and dense, less flavorful and not very good. My advice is to eat right out of the oven, or forget it. Even in warming them up later..

I really wanted to like this recipe, and even made it twice. I made it as written, and while the consistency is good, the flavor is not. It tastes like a can of pumpkin and cake batter-that's it.. It gets a few stars for being very quick, but it's not very good.

These were very moist and flavorful. I wasn't a huge fan of the texture but the hubs LOVED them. The batch was gone very quickly.

made it today with some Cinnamon Honey butter (recipe on this site too!) and they were a BIG hit. Had some friends over for a Christmas brunch and they all raved about how good the muffins were. I felt guilty cause they were soooo darn easy!

These are awesome and so easy!!!! I use spice cake, canned pumpkin, and 1/2 cup of milk. I bake at 350 for 22 minutes (make 14 large muffins) and they are perfect! I have made this recipe about 20 times in the last year, and every single time the muffins come out great.

These are GREAT. I used a spice cake mix and added one egg, mini chocolate chips, and walnuts. Made them as mini muffins for a work function and they were a huge hit. I was afraid they'd be to soft and cakey, but they were a great muffin texture.

These muffins are so moist and delicious. I used spice cake so I didn't add any of the spices in the recipe. Sprinkled some brown sugar on top before baking. My family loved them and they are super easy to make.

This is a fabulous recipe that I have made numerous times. It is delicious as well as nutritious (0 fat and only 180 cals/muffin). I like to use a spice cake mix instead of yellow. If you use the spice cake you don not need the spices. I also like to add raisins or other dried fruit. The batter is very thick; almost brownie like. The muffins, however, are very moist. I've also used a chocolate cake mix and added chocolate chips to trick my kids into consuming the healthy pumpkin. They love the chocolate muffins, but I prefer the spice ones.

These muffins are delicious and you could not ask for an easier recipe..I used TWO ingredients, spice cake mix and the pumpkin puree can. Wow!! No one will ever know.

These are EASY and awesome just the way they are. I might not have gotten the spices right because I just guessed, but other than that, I kept everything EXACTLY the ways it was written. No oil, no eggs, just YUM. In the 2nd batch, I added nuts to them because my husband likes that - just as yummy!

I made these muffins and sent them to Afghanistan where my husband is currently deployed to. I told him to try the muffins before sharing (to make sure they were good)but when he opened the box his soldiers saw and could smell the spices and they all wanted what was in the box and they dove right in. My husband said they were very moist and it made him miss home even more. It took almost a week for my husband to get the muffins and they were still fresh.. I'm going to make about 100 more to send to them.

I thought this was one of the best and easiest recipes for pumpkin muffins. It was very moist and had a strong flavor! It does surprise you because the dough is so stiff and a little hard to work with but it turns out great! I have shared this recipe and had others asking for the recipe!

I first started making these way back when I was using Weight Watchers to lose weight. I used a spice cake mix instead, added a little plain lowfat yogurt and a handful of raisins or chopped apple. Sometimes, I even used dried cranberries. Tasty!
