Directions

Heat the oven to 350 degrees. Spray a 2-quart casserole with cooking spray.
In a large bowl, combine all ingredients except the bread crumbs and butter until well mixed. Spoon the mixture into the casserole dish. Mix the bread crumbs and melted butter; sprinkle over the potatoes. Bake the casserole for 50 to 60 minutes or until bubbly and potatoes are tender.

Very good! I added some chicken chunks to it as well to satisfy my large family, and I substituted the swiss for mozzarella because that was what I had.

We really enjoyed this...very tasty. I tossed in some chives just to have that "oniony" taste. I have a huge carton of green chile in the frig..debated on throwing some in..think I will next time..will take it to a higher level. Overall, very pleased with the outcome. Thanks!!
