"Traditionally a long-simmered stew, this Mexican-inspired stew is quick and easy, thanks to canned hominy. Searing the pork loin in the pot before making the stew gives you a great base of flavors so the stew seems as if it indeed simmered all afternoon. Garnish with chopped cilantro and serve with warm tortillas on the side. Yum, yum, yum."

Pretty solid recipe. My only recommendation would be to add the pork in much later in the process (maybe 5 minutes before you are done) or else it ends up very overcooked.
I didn't have any of the ingredients so I had a bowl of ice cream! I'll do this again. Thanks for the recipe!
Yummy and Easy! I used only ingredients that I had in-house. I cooked a pork shoulder in the crock pot the night before. Substituted frozen corn for Hominy. Eliminated peppers, cornmeal and water. Added quartered mushrooms (just because I had them). Added pork at end. My 11 year old daughter enjoyed it!
