I've heard this mayo trick for years but never tried it until now. REALLY sorry I waited so long. Being on a low-carb diet, I made a few changes. I used low-fat mayo and brushed just a thin layer on both sides, placing the breasts in a baking dish sprayed with Pam. I topped them generously with grated parmesan and sprinkled on Greek Seasoning, salt, pepper and a little paprika...mostly for color. To keep down the carbs, I used a bit of shredded parmesan for the topping instead of the breadcrumbs the recipe called for. It baked up beautifully brown and so juicy inside...and so quick and easy. My picky boyfriend RAVED about it. As I was reading him this review, he said he wants to have it again tomorrow night!
