These were good. I liked them but not many else would eat them because of the coconut and raisins in them. Prob. will not make again because they didn't go very fast.

A lot of ingredients and took a while to make, but they were good. I used unsweetened applesauce and a little vanilla yogurt instead of oil.

These were really good but next time I will have to remember to add applesauce and remove some of the oil to make these healhier. Love that I can use carrots and apples from our garden/yard!

I REALLY like these! They taste great AND have all kinds of good-for-you things in them. Will definitely make again. I was very skeptical while making them, as my batter seemed very thin, definitely more like a cake batter, if not thinner. I ended up adding a few extra tablespoons of flour just in case (would have been fine without it). So don't worry if it seems like you don't have enough flour to soak up all the wet ingredients; it'll all work out. I had enough batter for 12 muffins and2 mini-loaves. Very good!

Fantastic recipe!! This is one of my favorite muffins, and hard to find commercially in my area. I was really excited when this recipe yielded 18 muffins instead of 12. Like a previous reviewer, I substituted the 1 cup of oil with 1 cup unsweetened applesauce. So yummy, so yummy.

One of our all time favorites! These are power packed for our athlete teens to take for breakfast. They keep you going! I have also altered this recipe again and again to suit the season, what I have on hand, or dietary needs (I make them gluten free!). Great recipe. Thanks for sharing!

Very good recipe. I substituted 1/2 cup strawberry yogurt and 1/2 cup apple sauce for the oil. You could probably use any flavor of yogurt but this is what I had on hand...Very moist and delicious.

These are very yummy - I took the advice of some of the reviewers and, in an effort to make these even better for you, subbed 1 cup of pumpkin puree for the up of oil. The flavor is great, but I find the muffin papers tend to stick to the muffin. So whatever you do try to do with these, make sure not to cut the oil out entirely :)

I give this recipe a5*. It was really moist and tasty. I felt I could have added more nuts or varying types of nuts to the mix. And next time I will try nutmeg in the recipe. Such a good muffin!

Easy? Well I wouldn't say the name is completly accruate. My arm was aching from all the grating required for this recipe... But I can tell you it was COMPLETELY worth it! The muffins came out delicious and moist! I love the addition of the coconut and carrots! This is not the kind of thing you feel guilty about eating or serving to your family. So healthy! After reading the other reviews I opted for 1/2 cup of apple sauce and 1/2 cup oil. Thanks for the advice! This recipe is a keeper! Cheers!

These are wonderful muffins, but I found that they had way to much oil. Next time I will either cut it by half, or use applesauce. I will be making this again though

These muffins are great!! I made them for my daughters snack day at pre-school and the kids loved them. I did leave out the nuts and coconut since kids can be picky. My husband and 11 month old also enjoyed them. I will be making them again and again.

these were pretty good. i split in half all these ingredients: 1/2 oil/applesauce, 1/2 white sugar/brown, 1/2 white flour/whole wheat, and added 1 extra apple and some nutmeg b/c we like it spicy. i threw some baby carrots, the apples, and pecans in the processor and pulsed till desired consistency so the kids wouldn't balk at the carrot pieces in it. i didn't use coconut b/c the kids don't like it and i didn't have any raisins. i think i would like these much better with those 2 additions, so next time i will add for me!

These are great muffins! I made them with a couple substitutions. I used half ap flour and half whole wheat. I also used 1/2c applesauce, 1/4c butter, and 1/4 oil to replace the 1c oil. I was able to make 12 muffins and 2 mini loaves out of the one batch. My kids (2 & 5) and I liked them so much we made a second batch the next day which yielded 24 muffins. Thank you for a healthy and terrific treat. Try them with the Cinnamom Honey Butter from this sight. So YUMMY!!
