I am NOT a meatloaf fan at all usually. The meatloaf I remember from growing up was dry with baked ketchup on it. BUT my 20 year old culinary student wanted to try making it so I agreed after looking up this recipe. This was SO good. We followed the instructions exactly and it was the BEST. We adjusted the serving size to 10 because all I had was a two pound package of meat. There is plenty left over and I think this is going to make terrific sandwiches tomorrow!

It's a staple in our kitchen. I use onion powder instead of fresh onion for my kids. It eliminates the possibility of one of them finding a piece of onion in the meat!

Good recipe. After reading numerous reviews, I decided to adjust the recipe based on advice from others. I completely excluded the brown sugar, reduced the amount of mustard to 1 tablespoon, increased the amount of ketchup to 1 cup, sauted the onion, and also added a tablespoon of worcestershire sauce. I also ended up cooking it for 1 hour and 25 minutes rather than just an hour which was perfect timing. Thank you everyone for the great suggestions in your reviews! I do not think mine would have ended up as good if I wouldn't have made these adjustments based on all your suggestions!

I make this all the time!! It's the absolute BEST meatloaf EVER!!! One of a family favorites for us! I usually make extra sauce and put it on the side.

This is my base meatloaf recipe, and the very first thing I tried when I decided to start doing actual cooking instead of just warming up pre-made stuff in the oven or microwave. Although I alter it a bit, it's become one of my "go-to" recipes for when I need something quick and easy. The first meatloaf I ever had was kind of ketchupy-tasting, so that's what my mouth looks for in a meatloaf. Therefore, I usually increase the amounts of ketchup and mustard by 50% (doubling the part that goes into the meatloaf mix, and leaving the glaze as is). I also quite liked it when I increased the sugar the same way, but I stopped doing that to try to keep some semblance of trying to be healthy! Also, instead of brown sugar, I use coconut palm sugar, which is healthier and tastes just as good. I try to add lots of different veggies, too, to make it a one-course meal that's easy to pack for lunch at work. Carrots are good, as are mushrooms, diced tomatoes, and chopped spinach.
