A seasoned bean and potato mixture is wrapped with Monterey Jack cheese in corn tortillas, then baked with an enchilada sauce, and topped with Cheddar cheese. This sounds strange, but it's really, really good. I came up with this when I was craving Mexican food and we didn't have may traditional ingredients in the house. It came out great, and it received rave reviews.

This is an easy and filling supper dish, good with cooked greens or a tossed salad and some sprouted grain bread. Almost any vegetables can go into the mix; just make sure they're all cut up before you begin, and add the longest cooking ones first. 

Quick and Easy Enchiladas

A hot filling of chicken, onion and tomato with Mexican cheese means no oven time for these enchiladas--a real time saver. Corn tortillas briefly fried make a fine flavor variation from the usual flour tortillas. If you cannot find rancherito cheese, substitute Monterey jack. 

Vegetarian Shepherd's Pie I

Cook the potatoes. Cook the kasha and bulgar, and then the vegetables. It takes a bit of time, but the end result is sensational. Mix the kasha, bulgar and vegetables together and pile into a pan. Top with mashed potatoes and bake. 

Potato and Broccoli Casserole

There 's lots of potatoes and broccoli taste in this hearty casserole. Broccoli soup, sour cream, cheddar cheese and a bit of mustard, join the vegetables in the pot and cook away in the oven for about an hour.
