These are very good cake mix cookies. Very easy, too. Just don't expect bakery caliber, it is cake mix after all. I made them with my 2 year old during my son's nap and had no problem finishing them up in a short period of time. She loved rolling them in the powdered sugar. We got just under 40 smallish cookies. The batter is a little oily, but did not produce an oily cookie. I baked for about 10 minutes and the bottoms were brown, but not burned. We also keep them in a closed container. They stay on the softer side this way.

Not sure what happend with these cookies. The centers tasted like unbaked batter and the bottoms were too brown. Maybe next time I will lower the oven temp.

Tasted amazing! I ran out of oil so added about 1 tbsp of melted butter to make for 1/3c. I also used 2 tbsp of lemon juice as well as zest instead of extract. While the first batch was cooking, I put the rest of the batter in the freezer. When the first batch finished, it tasted ok. When i made the other batches that had come out if the freezer, the lemon taste was much more pronounced! Definitely refridgerate if you can or freeZe batter for about 10 min if you are crunched for time before baking. It makes all the difference!!!

I didnt use lemon extract so I used about 2 tsp of lemon zest and 2 tbsp lemon juice. I will definitely make these again. Next time I will use the suggestion of another user to add one unsweetened pkg of lemon flavored kool-aid. EXCELLENT!!!! UPDATE 8/19/09.....the last batch, recipe only made about 25 cookies, only lasted 1 day! I made them again today and used the suggestion from Barb Maxwell to use 1 pkg of unsweetened lemonaid kool-aid. In addition, I added about 1 1/2 tsp of lemon extract and MAN!!! This gave it the kick I needed! I used Duncan Hines Moist Deluxe Lemon Supreme cake mix both times. I used parchment paper and cooked them for around 10-11 mins. These cookies are quick, simple and GOOD!!!!!!!

These are excellent cookies! Very easy to make and make for a wonderful summer treat. Followed recipe exactly.. but may use fresh lemon juice next time. Roll the cookies generously in the powered sugar.. and double the recipe if you want more - this recipe only makes about half of the amount it says it does (unless you make quarter size cookies!) Highly recommend this recipe!

Very good. Great texture for a cookie. I used fresh lemon juice- about 2 T. and let the batter sit overnight in the frig. My first batch were a little under done- which really give off the 'Fruit Loop' flavor. I let the next batch cook longer, until lightly brown on the edges, and they taste much better- more like lemon. I look forward to making this again, and trying different versions of it!

The cookies were yummy!! I added 1 tsp. lemon zest and and 1 Tbs with addition to the lemon extract. Lemon juice. I only wish there was a recipe from scratch without using a ready cake mix.

Pretty good little lemon cookie. I agree, however, with a couple of other readers who said it has a bit of a "Fruit Loops" taste..kinda cloying; guess it's the artificial lemon flavor of the cake mix. Also agree with the readers who said to chill the dough before forming it into balls..gotta do that or it's pretty much impossible to work with.

I wanted to find a lemon cookie that would be an easy base for experimentation and this is definitely THE ONE. I omitted the powdered sugar step because I wanted a tangy cookie. I added the juice and zest of one lemon and a cup of dried cranberries. My boyfriend, mom & gram all loved them! FABULOUS! :) ***I do recommend refrigerating the dough as that makes it easier to form. I also chilled two spoons and used those to form the dough (instead of handling it) so everything would stay cooler longer.***

What a pleasant surprise! I made exactly as directed and these are so delicious and different. 5 stars for the taste, price, ease, time and effort!! Can't beat it! I will take these light, refreshing and perfectly sweet cookies with us on our beach trip! *update* I just tried this recipe with Duncan Hines Chocolate Fudge mix and threw some peanut butter chips in with it. AWESOME! Kids went crazy! Can use this recipe with any cake mix you prefer for great cookies!

Great recipe! I didn't want to buy lemon extract so I used about 1.5 tsp of lemon juice. I did half of it just like the recipe; the other half, I made a simple lemon glaze with powdered sugar, butter, lemon zest, and some lemon juice then drizzled it over the top, and with the icing instead of powdered sugar, they were absolutely amazing and disappeared!

I followed the recipe exactly and got the expected result - except the taste! They really do taste just like fruitloops. Not lemon, more like yellow flavor. Not for me. Really nice soft texture and chew, good presentation, though.

Very, very sneaky way to make excellent lemon cookies. My son called me a "goddess". I didn't have lemon extract (where the heck did it go???), so I just made it straight. I'll try it next with the extract, I'm sure it'll be even better.

Very good! Fast and tasty! Just what they promised to be, yummy lemon cookies! They do taste slightly like fruit loops, but if you like fruit loops, it isnt a problem! I am making these as I type this, to send to my hubby in Iraq. Also am going to try some with devil's food choc. cake mix. YUM!

I didnt know how this would turn out, but I am pleasantly suprised! They are really good, I added about 1/2 cup of chopped pecans and it made them super yummy! I also used a chocolate cake mix and added almost 1 cup of semi-sweet chocolate chips to try something different. I will definately be making over and over again!!!

So while I'm only giving these three stars due to my personal preference, I think there's a lot to be said for these cookies. They're simple, they're fast, and they're inexpensive. No, their flavor is not gourmet, and we didn't prefer them personally, but frankly, it's a cake mix cookie. You get out of it what you put into it. If you don't need a super gourmet tasting cookie, these are for you. Or maybe you do, but you find you prefer them. We didn't, personally, but the review and overall rating indicates that lots of people do. So there you have it. :)
