Great easy recipe. I made them last night and only had 2 left. I followed the directions and did not have to refrigerate the dough. My family loved this recipe

Followed the recipe exactly. Here's how good these are: I made them for my neighbors as a thank you for something, and they liked them SO much that at a later function, my neighbor's eyes lit up upon seeing the crummy store-bought lemon muffins I had brought, as the hope was that these muffins might be homemade and that they might taste like the Easy Lemon Cookies!!

These were simple and good. I prepared a plated luncheon with a brownie and one of these Easy Lemon Cookies on each dessert plate -- and they were a hit. I, too, substituted fresh lemon and zest as suggested by another contributor. One of the luncheon guests said they knew there had to be fresh lemon in it. Great recipe! (Just don't under bake them.)

I love tart things, so I took some advice from the other reviewers and used regular yellow cake mix instead of the lemon cake mix and added a lot more lemon juice. I reduced 2 eggs down to 1 egg and dare added 1/2+ cup real lemon juice! Plus, I added 2 tsp of lemon extract. They turned out real tangy and delicious with still nice and chewy texture. I also made sure to refragirate the dough for several hours before baking them.

These were very good. Like others I omitted the lemon extract and replaced it with a tablespoon of lemon juce. They turned out great.

Just made them! Delish! Substituted cinnaomon apple sauce for vegetable oil. Used lemon zest and juice of 1 lemon. Refridgerated before rolling in sugar to bake. Crisp on the outside, chewy on the inside! Yum!

So good! My co-workers loved. I made a 2nd version using red velvet cake mix & almond extract that was a huge hit too! My mom has requested I make a batch of cookies for this weekend because we have family coming into town. It's too easy and very good! I baked mines for about 10 minutes on a baking stone. Thanks for sharing!

Wow, this is a great recipe! Instead of the lemon extract, I used a tablespoon of lemon juice and some lemon zest, and I baked them for 10 minutes. Having a slight golden brown edge around the cookie didn't take away the chewiness at all. These cookies really are chewy and fluffy. Best of all, they freeze really well and remain just as chewy and fluffy once they have been thawed to room temperature. The recipe is so easy. I will definitely be making this again. I might even try some other cake flavors. Thanks!

Really good and SUPER EASY! I added the juice and zest of one lemon and only a dash of the lemon extract. I chilled the dough, but it was still a bit sticky to work with... I just kept my hands a bit damp and rolled the dough balls in the sugar until thoroughly coated, then pressed them down a bit. Glad I read reviews first- the baking time is definately 12 minutes exactly, not 6-9 as listed in the recipe. One thing though, these cookies are not great hot out of the oven, but once you let them cool completely, they're fantastic.

These were great! I have also made cake mix cookies with 2 eggs and a stick of butter. I bake until the tops crackle - they are done and a bit chewy. For a fun twist next time I am going might add 1 cup rice krispies and some lemon zest.

These were just okay for me... a nice change because they are not a real sweet cookie, and they are light in texture... but not something I'll make again. I made them for a potluck and half of them remained, so that was the confirmation I needed.

Taste nice and lemony but are way too light and have no substance. Need to eat many in order to feel satisfied. Wouldn't make these again.

This cookie is really, really good! (I also think this is the copycat recipe to the Lofthouse cookies) I baked mine for 10 minutes and it was perfect. I can't wait to try different flavours...Mmmm. THX

If I could give this 6 stars I would. I refridgerated the mix for an hour before making into balls and it was a dream to work with. My husband and son are not big lemon fans and they LOVED them.
