Easy Hawaiian Chicken Packets

4 skinless, boneless chicken breast halves
1 cup bottled teriyaki sauce or marinade
1 green bell pepper, seeded and sliced into strips
1 red bell pepper, seeded and sliced into strips
1 onion, chopped
1 (20 ounce) can pineapple chunks, drained

DIRECTIONS
Preheat a grill for medium-high heat.
Lay out four squares of aluminum foil. Place one piece of chicken in the center of each square. Pour the teriyaki sauce over them, turning to coat. Distribute equal amounts of the green and red peppers, onion and pineapple chunks amongst the chicken pieces. Fold the foil up and seal tightly into packets.
Place the packets on the grill, and cook for about 20 minutes, or until chicken is no longer pink and juices run clear. I like to take one packet off the grill and check it before removing them all.

I love cooking in foil packets because it's fast and easy. This recipe is no exception! I grilled the packets and the chicken was super moist. The combination of the veggies, sauce, and pineapple is very tasty. I served the contents over rice (be sure to pour the juice from the packet over everything...yum!) This freezes exceptionally well, too.

These are delicious!! The only changes I made was that I used breast strips, a sweet onion and I also marinated the chicken for an hour in the teriyaki sauce. I was having a friend over for dinner so I cut up the veggies and stored them in the fridge along with the marinating chicken so that when we were ready to eat all I had to do was throw them together. So easy, so good, and yet good for you. This will definitely be a regular of mine.

Very good and super easy. I added sweet peppers and mushrooms to the mix and then let everyone make their own packets. The kids even liked it!

I made this on our camping trip this weekend, and it was a big hit! Only it took closer to 40 minutes to cook. We didn't mind because we were having so much fun sitting around the fire, watching them cook.

This is a faboulous chicken dinner! I cracked some pepper over the chicken before adding the remaining happiness. Everyone loved this meal with wild rice.

You can't beat this recipe for how deliciously simple it is! I did grind a little black pepper over the chicken before adding the teriyaki sauce. You shouldn't need any salt as the teriyaki sauce is salty enough. I served this over couscous and it soaked up all the delicious juices. Yum! You could really play around with this recipe with different sauces/marinades and veggies. I'm thinking BBQ sauce, onions, maybe some summer squash. Lots you could do!

This recipe was a great and fast one. Omitted the peppers because my boyfriend doesnt care for them, I think if we had them it would have added even more flavor. We used chicken tenders and salt and peppered before pouring in terriyaki sauce. Also added in the natural pineapple juice. This chicken was soooo moist and could be easily cut with a fork! We served with garlic mashed potatoes This packet idea opens up the door for additional great tasting and fast recipe ideas
