I needed a quick dessert for an informal dinner with friends, and this was a real hit with the adults and kids! I doubled the recipe and followed the advice of other reviewers by using half white sugar and half light brown sugar, 1 teaspoon of vanilla in the batter, and I sprinkled the top with a little cinnamon and sparkling sugar. To save some calories I used skim milk, and because I doubled the recipes, I spread the fruit around the batter instead of dumping it in the middle. Instead of peaches, I used two jars of drained Morello cherries in light syrup that I always keep in the pantry from Trader Joe's. We served the cobbler warm with vanilla ice cream. The cobbler is better served warm. When it cools it gets a little dense, but I suspect there won't be much left over if you make this recipe!
