My boyfriend loved these enchiladas. I had to make a few modifications based on what I had in the pantry. I baked a chicken the night before, so I used the meat we had left over and it was a PERFECT use of leftovers. I also used black beans instead of pinto beans and 1/2 canned chopped tomatoes with green chili peppers added in addition to 1/2 cup salsa (my boyfriend is afraid of anything spicy and our hot sauce was too spicy to use alone). Like many of the other comments, I used half the cream cheese to be on the safe side. A big difference was omitting the cheese and I made a really simple sour cream sauce and baked the enchiladas smothered in the sauce and finished the dish with a nice sprinkle of paprika as garnish. Thank you for giving me a fun recipe to play with!

We all loved these! Definitely needed the enchilada sauce in the bottom of pan and on top of the enchiladas. ALso, as a personal preference, we omitted the beans. Delicious!!!!

very good with a few changes. I used leftover turkey instead of chicken. I also added a package of taco seasoning to the cream chesse mixture. I also used honeywheat tortillas instead. It was awesome and the kids liked it too. I will be making this again.

This is SO good. I have made it twice now with 2 different salsas & it is loved by all! I use the low fat cream cheese to cut calories, and it is still wonderful.

Easy and delicious. I like to add green onions, black olives and heat the tortias in green enchilada sause before rolling them.

Our family loves these enchiladas. They are so easy. I put them together, put them in the oven and head to the gym. I give instructions to my husband to take them out in 30 minutes! Perfect.

I had cooked my chicken in the crockpot all day. I just shredded it and added the rest of the ingredients except the shredded cheese adding also about 1/4 cup cooked white rice. I made my own tortillas topped them with the cheese and serving with sour cream. YUMO!!!!

I made a recipe w/ 6 servings for 3 people and we practically finished it. It's easy, cheap, and really, really good! I would recommend some cream of chicken soup on top because the tortilla shells get a bit dry...

This was great, I made a few modifications... Instead of salsa I used enchilada sauce (from a can) for some kick and cut up my own onions & green peppers to add to the filling. I also used black beans instead of pinto, and half the cream cheese as was mentioned. Also only cooked till it was bubbly (about 15 min) at 375. All my modifications made this recipe less "easy" but it was defiantely good and I will make again!

These were so yummy, a little too much Cream cheese though, I read other reviews before making these and put a half a can of green sauce on the bottom and half on top then the cheese, and didn't use 2 cups of cheese, I only used one, and they were a smash hit at dinner time, even my husband loved them, and he is Spanish and swore til I made these that his mother made the best enchiladas, now I guess i am giving her a run for her money.THANKS!

This was very good! I made some changes, though. I used corn tortillas instead of flour, I added a can of cream of chicken soup to the cream cheese and bean mixture and instead of salsa, I covered the casserole with a large can of red enchilada sauce. I didn't have time to roll the tortillas, so I layered 6 corn tortillas on the bottom, then put some of the cream cheese mixture, then 4 tortillas, then the rest of the cream cheese mixture, then 4 more tortillas and then the cheese and enchilada sauce. It came out really tasty.

Excellent and easy! I used lowfat cream cheese - and half the amount - low carb wraps & Trader Joe's Double Roasted Salsa. Cooked fresh chicken breast coated with a chicken taco seasoning. Tons of flavor and a little kick - great recipe! Thanks!
