I thought this could be a great dish, but the way it is written wasn't great for some of our likes and dislikes. I used a 20 ounce package of tortellini, which was perfect with the amount of sauce. But next time I will cut the spinach in half, as my kids wouldn't eat it because there was too much. I love spinach and there seemed too much for even me. I also didn't like the parmesan cheese on the top and would omit that the next time. It didn't seem to blend well, nor did it melt at all, so it made a weird crust on top. I do think that putting in some chopped sun-dried tomatoes would be so good in this. The dish reminded me of a dish I get when I dine at Olive Garden that has sun-dried tomatoes in it. I think I'd give this recipe 5 stars with those few changes, which are mostly just personal preferences and not reflective of the recipe itself. My husband thought this dish was "excellent" as is, but didn't care as much for the spinach and suggested less of it next time. It is a very easy recipe, which I love!
