Thanks for this idea. I used a can of refried beans with about 1/2 cup of picante sauce (salsa would work, too) instead of chili, and I used Mexican style shredded cheese (cheddar, monterey jack, etc.). If you use shredded cheese, I recommend you sprinkle it (generously) over the chips and beans, then cook for two minutes under the broiler. I also drizzled some of the picante and some black olives over the cheese. SO YUMMY. This makes a great lunch!
