This sounded so good, and I loved the idea so much, that I decided to try it, but with a few changes (according to what I had on hand & suggestions of others before me). Rather than hot dogs, I had a 16 oz pkg. of kielbasa sausage that I sliced and sauted with some chopped onion first. Worried that the bean juice would make the cornbread soggy, I sprinkled a layer of shredded cheese over the sausage to create a barrier, as someone suggested. I used a 28 oz. can, plus a 14 oz. can of Bushes "Touch of Maple Syrup" baked beans, and prepared a 16 oz. package of Marie Callendars "just add water" cornbread mix. I added some shredded cheese to my batter, plus some chopped jalapenos. I used all but "4 muffins worth" of the cornbread mix. (I baked those separate for tomorrow's black eyed peas). Anyway, I baked this for about 40 minutes, and the cornbread was baked thru and moist, but the beans on the bottom seemed too dry & sticky for some reason. (May have been that "touch of maple"...not sure) Other than that, it tasted really good and and my husband liked it, so that's all that matters! I highly recommend the kielbasa, too. I'll give it another try with the regular ingredients, but on a smaller scale next time. Thanks!
