I'm loving you for this jambalaya recipe without tomatoes. I am from Louisiana and the only time I have seen tomatoes in jambalaya, it was made by someone from somewhere else. Very authentic, except for the keilbasa. I subbed smoked pork sausage for a true Louisiana classic taste. Thanks again!

Too much rice, not red enough and something is missing. I can't figure out what though. I am still searching for that great jambalaya recipe.

OK, so I am not a Jambalaya aficionado, so I can't say how good this compares to "real" jambalaya, however....this is GOOD STUFF. I added red bell peppers and extra celery. I also added about 1c more broth. I also added 1 can stewed tomatoes. Oh, I only had one can of chicken broth so I used 1 c chicken broth and 2 cups beef broth. It was just perfect, so I believe tomorrow I may need to add some extra broth or something to make it not pasty. This dish is delicious.

Very good and not too difficult. I added some diced tomatoes and found some chicken andulle sausage to use. Goes well with corn bread. Yum!

This was pretty good. I added a 15 oz can of plain tomato sauce and about half a cup of extra rice. Though I am not a huge jambalaya fan, my husband seemed to like it.

This is a great recipe not only because it tastes wonderful but because it is a one pot dinner. The left overs were just as delicious.

I would give this 10 stars. It was wonderful. I made this for 30 people for a Cajin Birthday party. It was a hit.

Not quite what I was looking for, but definitely not terrible. Relatively quick to make, and uses a minimum of pots and pans if you are quick with a knife (don't have to take time to prep all of your ingredients before you start cooking).

This is by far the best jambalaya recipe I've found. I did change it a bit though. I used a small pinch of the ceyenne pepper because I don't do spicy foods. I used 1Tablespoon Tony Chacherie's cajun seasoning because it wasn't flavorful enough for my taste. When all was said & done, it was great. Will make again & again.

If you are looking for something similar in flavor to (but better than) Zatarains, this is not it. I used chicken and Andouille sausage, and tomatoes... I don't know what flavor was missing, but it just wasn't right.

Luv, luv, luv it. Made a few changes though. Instead of using oil, I crisped 6 slices of bacon, removed them from the pan, cooked the veggies and meat in the bacon fat and then added the crumbled bacon at the end. I didn't have enough chicken stock, so I used half chicken stock half beef stock. I like my jambalaya with a little tomato flavor (what can I say? I'm from Connecticut, not the bayou!), so after adding the rice and before adding the stock, I added in a couple of tablespoons of tomato paste. All in all, excellent and will make again (and again, and again...).

I thought this recipe was pretty good and easy to make. I added a can of diced tomatoes and changed the seasonings. I left out the hot sauce, cayenne, garlic, and onion powder and I added some creole seasoning and garlic powder. It wasn't my husband's favorite, but he isn't that fond of rice. I thought it was great and made great leftovers too.

This is really good, and is truely a one dish recipe which is fantastic. The reason for only four stars is that I feel like it is missing something, but I am not sure what. I was thinking about a can of rotel tomatoes and chilis next time. I will absolutely make this again; however, it will have some slight modifications. Oh yeah, I added extra worchestershire sauce, and doubled the cayanne as I like it spicy.

This is a very easy and quick one pot meal to prepare. As written is it very good and has a great taste. We like our food very spicy so we had to add alot of extra spice and jazzed it up with a bit of creole seasoning.

This is very good and so easy to make! I ended up doubling the amount of kielbasa, just so I could use up the whole package and we didn't mind it being more meaty. I also added a can of diced tomatoes and some carrots for extra color. My 2 1/2 year old son will even eat this!

This was great. I halved the recipe (since there was just two of us) and used turkey kielbasa and a leftover (cooked) porkchop from the night before instead of chicken, and some tofu. I left out the celery (because I don't like it) and doubled the amount of bell pepper instead. I threw everything in the crock pot and added a can of chopped tomatoes with some of the liquid drained for 3.5 hours. Easy, spicy, delicious. Will make again! Thanks!
