I've used this recipe for about 2 years and it's always a satisfying, low fat meal you can feel good about serving. It's very versatile - as other reviews have indicated. You can use fresh veggies or frozen (thaw first). When you cover it, the moisture from the veggies "steams" the fish so be sure to uncover about half way through cooking and let the moisture out a little. I spray the pan with pan spray, arrange my fish, sprinkle on some lemon juice (not too much), the old bay (or whatever seasoning blend I want to substitute). I omit the butter. I use garlic powder vice garlic salt to lower the sodium content - old bay has enough salt. I also put some lemon juice over the veggies for some added flavor. I top the fish with Panko (japanese bread crumbs) about 1/3 - 1/2 cup mixed with some paprika (1/2 tsp), 1/8 tsp. pepper and 2 T. grated Parmesan Cheese. Cook as directed. This is a great recipe.
