This was the first time my family and I have tried arugula. After reading a few other reviews I made the following changes to the recipe and we all loved it: added 1/4 c. dried cranberries for some sweetness, toasted the pine nuts, and used 1/2 c. of homemade guacamole thinned with a little olive oil and rice vinegar for a more flavourful dressing. I used parmesan shards for the "gourmet" look. The salad had the perfect cooling effect after serving a spicy garlic shrimp dish. My kids loved it too!
