Eggs Royale

Submitted by: Joan Downs
My aunt gave this recipe to me after she served it at a wedding brunch. With muffins and fresh fruit, it's now my favorite breakfast entree. My hobbies are cooking and collecting cookbooks. In fact, I've collected so many books my dad built a bookshelf especially for them.

This is my husband's favorite use of leftover hard boiled Easter eggs. Great comfort food!

Every bit as quick as scrambled eggs are meant to be, this hearty dish-- with red pimientos and green parsley or chives-- is nice for hectic Christmas mornings.

These are my favorite scrambled eggs. The white sauce, flavored with chicken bouillon, keeps the eggs creamy and moist. It's a tasty twist on a morning mainstay.

'Making breakfast is my favorite part of running a bed-and-breakfast,' explains Megan Hakes of Wellsville, Pennsylvania. 'Returning guests often request this poached egg dish.' The eggs are served over English muffins and Canadian bacon then topped with a simple sauce.

When my four sons, one daughter and their families come to visit this egg dish is devoured in a hurry...even if I double it! The Swiss cheese is a nice change from the usual cheddar cheese.

All you need are the eggs and a cream sauce. This dish is great served over toast at breakfast for the day after Easter because it uses up some of your leftover eggs!

When I got married, my husband asked me to get this favorite recipe from his mother. I like to serve it with homemade bran muffins and applesauce.

This is a dish my wife had to learn to make in her high school home economics class. I've adapted and renamed it. To me, it has no equal and brings to mind those special days of the '40's. --Richard, Ramsey Eugene, Oregon
