I was looking for a quick breakfast that would use some frest veggies I had on hand, and this was perfect. I used 10 whole eggs and no whites, cut back the pepper, and added fresh mushrooms to half. This is definitely a keeper, because it was so convenient, fast to throw together, and a full meal when toast was added!
