1/4 cup chopped onion
2 teaspoons butter
2 cups peeled, cubed potatoes
1 cup sliced fresh carrots
1/4 cup sour cream
1/4 teaspoon salt
snipped chives

DIRECTIONS
In a small skillet, saute onion in butter for 8-10 minutes or until golden brown. Meanwhile, place potatoes and carrots in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain. In a small mixing bowl, mash potatoes and carrots. Beat in onion, sour cream and salt. Sprinkle with chives.

Nutritional Analysis: 1 cup (prepared with reduced-fat butter and reduced-fat sour cream) equals 225 calories, 5 g fat (3 g saturated fat), 17 mg cholesterol, 368 mg sodium, 41 g carbohydrate, 5 g fiber, 6 g protein.

Excellent, very tasty potato recipe; definitely one of the best on this website. The sautéed onion (white onion) adds lots of taste to this wonderful potato recipe. I used baby carrots for this recipe, which made it quite easy to mash along with the potatoes. Since I like crumbled bacon, I will sauté it with the onion next time I make this dish. I will definitely make this tasty potato dish again.

This was a great alternative to the regular mashed potatoes. I would recommend one change, of boiling the carrots and potatoes separately. My carrots were under cooked so they were chunky. Great dish for kids too!

I tried this recipe just wanting something different.I had the best time seeing little bits going on my families plate and then reaching for more after tasting.This is an excellent unexspected flavor. I doubled the recipe and it was gone. I started cooking the carrots first and then added the potatoes about 15 minutes later and cooked until the potatoes where done, after reading one of the reviews about doneness.I also made sure I did not blend until smooth because the different texture I knew the carrot would add, you will be glad you didn't. We love sour cream so we loved that ingredient and did try the garlic in the onions that another person suggested.YUM. A real keeper that I plan on sharing with my sister's and friends. Thanks so much for shareing.

Personally, I thought these were excellent but my boyfriend thought that the carrot gave them a funky taste. I took the advice of other reviewers and added 2 cloves of garlic to the onion mixture and stirred in 2 sliced green onions right before serving. I will be maing this again ... healthy, low fat alternative to mashed potatoes. No need for gravy!

Very good! Easy, tasty, different! I added a few more carrots. Don't over mash! If Alton Brown has taught me one thing it's that over mashing causes gluten and gluten is NOT good eats! lol Plus if you leave it slightly lumpy, it adds a nice texture! (I'm studying abroad in Italy) So it's kinda hard to find things like sour cream so I just replaced it will a little milk, no harm done. I really love this dish and will make continue to make it in the future!

It was more strange than it was tasty. I was intrigued by the change in the mashed potato recipe and thought I would give it a try. It wasn't any more exciting than plain mashed potatoes.

We loved these!! I will definitely be making this again but like another reviewer mentioned, I will cook the carrots first to make them easier to mash. In any case, my husband and my 13 mo. old LOVED them.

These potatoes are fantastic! Saute your onions for the directed time so they can caramelize because this is where the main flavor is. I didn't have a problem mashing my carrots as others mentioned. If you went by the directions you should have been fine. I cut my carrot slices thin because I know they take longer to soften than the potatoes. These potatoes are definitely going into our dinner rotation, thanks a bunch!
