1/4 cup chopped onion
2 teaspoons butter
2 cups peeled, cubed potatoes
1 cup sliced fresh carrots
1/4 cup sour cream
1/4 teaspoon salt
snipped chives

DIRECTIONS
In a small skillet, saute onion in butter for 8-10 minutes or until golden brown. Meanwhile, place potatoes and carrots in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain. In a small mixing bowl, mash potatoes and carrots. Beat in onion, sour cream and salt. Sprinkle with chives.

Nutritional Analysis: 1 cup (prepared with reduced-fat butter and reduced-fat sour cream) equals 225 calories, 5 g fat (3 g saturated fat), 17 mg cholesterol, 368 mg sodium, 41 g carbohydrate, 5 g fiber, 6 g protein.

This was a great alternative to the regular mashed potatoes. I would recommend one change, of boiling the carrots and potatoes separately. My carrots were under cooked so they were chunky. Great dish for kids too!

Excellent, very tasty potato recipe; definitely one of the best on this website. The sautéed onion (white onion) adds lots of taste to this wonderful potato recipe. I used baby carrots for this recipe, which made it quite easy to mash along with the potatoes. Since I like crumbled bacon, I will sauté it with the onion next time I make this dish. I will definitely make this tasty potato dish again.

Personally, I thought these were excellent but my boyfriend thought that the carrot gave them a funky taste. I took the advice of other reviewers and added 2 cloves of garlic to the onion mixture and stirred in 2 sliced green onions right before serving. I will be maing this again ... healthy, low fat alternative to mashed potatoes. No need for gravy!

Very good! Easy, tasty, different! I added a few more carrots. Don't over mash! If Alton Brown has taught me one thing it's that over mashing causes gluten and gluten is NOT good eats! lol Plus if you leave it slightly lumpy, it adds a nice texture! (I'm studying abroad in Italy) So it's kinda hard to find things like sour cream so I just replaced it will a little milk, no harm done. I really love this dish and will make continue to make it in the future!

It was more strange than it was tasty. I was intrigued by the change in the mashed potato recipe and thought I would give it a try. It wasn't any more exciting than plain mashed potatoes.

These potatoes were pretty good. I personally found them to be a bit sour, but I'm not a huge sour cream fan. The in-laws and husband enjoyed them, though.

This is such a great twist on mashed potatoes!! I have given several friends the recipe and they all love it. I do add 2 cloves of garlic to the onion and it makes a great addition!!

Was very good and a great way to hide the veggies from my boys! I felt there may have been something missing, maybe some kind of tangy addition. Next time I think I'm going to try adding some ranch dressing or cream cheese. Overall, following the recipe exactly is still very good.

My family liked this side dish, but I made a few modifications. I added parm cheese, carmelized the onions and sprinkled french fried onions on top. I also baked it for a few minutes after adding the fried onions for a more casserole feel.
