Ingredients

  • 1 1/8 cups all-purpose flour, divided
  • 1 cup quick-cooking oats
  • 1 1/2 cups packed brown sugar, divided
  • 1/2 cup cold butter or margarine
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups flaked coconut
  • 1 cup chopped walnuts
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup semisweet chocolate chips

Directions

  1. In a bowl, combine 1 cup flour, oats and 1/2 cup brown sugar; cut in butter until crumbly. Press into a greased 13-in. x 9-in. x 2-in. baking pan. Bake at 375 degrees F for 8-10 minutes or until golden brown. Cool on a wire rack.
  2. In a mixing bowl, beat eggs, vanilla and remaining brown sugar. Combine the coconut, walnuts, baking powder, salt and remaining flour; gradually add to egg mixture. Stir in chocolate chips. Spread evenly over crust. Bake for 18-20 minutes or until golden brown. Cut into bars while warm. Cool on a wire rack.
