I used squash instead of pumpkin and cut back on the spices....wonderful. I made a half batch and didn't notice that the recipe was for three loaves. I made one big loaf with the half batch. It took 85-90 minutes to cook but it didn't burn. Love it. Thew in some raisins too. Ummm Ummm Good!

Everyone who said that this is a super moist bread was right!I made a double recipe for teacher gifts. The only thing I modified was to use pumpkin pie spice instead of the listed ones. (I didn't have some of them on hand) I also took others suggestion of substituting brown sugar for 1/2 the sugar called for. Fabulous! You will not be disappointed. Thank you Laurie!!!

I tried this recipe out for my pumpkin bread loving girlfriend and I tell ya, it turned out much better than I expected. Since it was my first time making any bread object I was worried I would make a big loaf of inedible nastiness- but, to my surprise it went very well. I followed a few modifications- I used 1 stick of unsalted butter, 1/2 a cup of oil (instead of the 1 cup of vegetable oil), 1 cup of brown sugar, 2 cups of white sugar (in place of the 3 cups of white sugar), and instead of the cinnamon, nutmeg, cloves, ginger, I used about a tablespoon and a sprinkle of Pumpkin Pie Spice. It turned out wonderful- aside from getting a little browner than I would have liked. It made 12 regular sized muffins, 1 medium sized loaf, and 8 cutesy holiday shaped mini loafs.

Dont let it fool you-- this is cake not bread, esp with the 3 cups of sugar in it. It is really good- everyone liked it BUT I think I will do it again with 1 less cup of sugar. If that works I may cut the sugar even lower. Also it says it makes 3 3x7 loaves, I made 4 and they almost overflowed the pans, I may go for 5 next time. Did I say next time??- yes I will make this again.

Wow... this was awesome! I made it for Thanksgiving but me and my family ended up eating half the loaf 10 minutes after it came out of the oven. The house smelled wonderful! Good think I made an extra load for dinner the next day! I followed the recipe to a T or the first go around. I have altered the oil to apple sauce and I've added fine chopped walnuts. I plan on giving this bread to every person I visit this holiday season. It really is delish! Thanks!!!

If your looking for a great tasting pumpkin loaf stop here. I have to say this pumpkin loaf is one of the best out there. Its even better than Starbucks. Its a keeper for sure. Heres a little tip: sprinkle a mixture of cinnamon and sugar on top and they can't keep their hands off of it.

This smells so delicious while baking, and tastes equally delicious. I used 1/2 cup applesauce in place of half of the vegetable oil, substituted 1 cup of the sugar with 1 cup of brown sugar and used half whole wheat flour and half all-purpose. I also used pumpkin pie spice instead of nutmeg, cloves and ginger. For muffins, I would suggest baking for 25 minutes, and my loaf was done after one hour. Very good!

Yummy! Very good! I made a full loaf, 2 mini loaves, and 6 full size muffins from this batch. The only change is the time for each different one. The full loaf took appr. 65 minutes, the mini loaves appr 50 minutes and the muffins appr. 30 minutes. Highly recommend.

So yummy! I got a big loaf, three small loaves and twelve muffins out of one batch. The muffins I forgot about, and they still even taste yummy over cooked!

I followed the reviewer's suggestions about 1/2 c applesauce and 1/2 c. oil. I also replaced 1 c. white sugar with brown. This was my first time making pumpkin bread and now I have the confidence to play with this recipe. This turned out perfect and moist. I would love to add some nuts or chocolate chips next time.

Recipe turned out delicious! I made it for my parents who tend to be pretty tough critics and they said it was one of the best they had. I did follow a few recommendations: 1) used 1/2 cup applesauce & 1/2 cup vegetable oil 2) added carmelized pecans to the top for the last 10 min. of baking (3/4 cup pecans, 1/4 cup of brown sugar, 2 tbsp butter) 3) baked 10 min. longer than suggested. I would have liked to use 2 cups white sugar and 1 cup brown sugar, but I only had white. The pecans really made this bread taste amazing! They didn't really stay on very well, I would like to try carmelizing them and then folding them into the batter and baking inside next time.
