Ingredients

  • 1/2 pound Bob Evans® Original Sausage Roll
  • 1/2 (20 ounce) package Bob Evans® Home Fries Diced Potatoes
  • 3 tablespoons bell pepper, chopped
  • 3 tablespoons onion, chopped
  • 2 tablespoons milk
  • 6 eggs

Directions

  1. Crumble sausage into frying pan. Add potatoes, pepper and onion. Cook slowly until sausage is browned. Beat eggs and combine with milk. Add to sausage mixture and cook, stirring occasionally to fluff eggs, until eggs have thickened. Refrigerate leftovers.

  • Microwave in 2-quart glass casserole, crumbled sausage on 100% power (high) for two minutes. Stir to break-up sausage. Stir in potatoes, peppers and onions. Microwave two minutes on 100% power (high). Beat eggs and combine with milk. Add to sausage mixture. Microwave 3-4 minutes on 100% power (high), stirring after each minute until eggs are set.
