Are you ready to be the talk of the party-try this recipe! Goes together easy and has a zesty bite. I didn't have sun dried tomatos so I substituted 1/2 packet of splenda which did the trick! I also sprayed the baguette with olive oil broiled and then added mozzarella and broiled. I let the guests add their share of bruschetta. DELICIOUS!

Great flavor combinations and super easy to prepare. My guests loved this app. I think you could easily go without the cheese as well - the tomato mix carries the dish well.

This recipe is amazingly delicious! After using sun dried tomatoes packed in oil, I found no need for additional olive oil. Adding the fresh basil is a must and definitely kicks the flavor up a notch. I recommend using fresh mozzarella and melting a slice on the bread and adding the mixture on top. I brought this as an appetizer to a friend's birthday and there was not a single tomato slice left over.

Bruschetta is standard in my household, it's made for holiday's and a lot during the summer for a light dinner. I have never melted cheese on bruschetta before but I have cut up fresh mozzarella and put that in the mix. I loved the addition of the sun-dried tomatoes, I didn't have anything left over however the melted cheese is not really necessary. It was delicious without the cheese all together.

Very good, and easy. I think I might try it with parmesan instead of mozzarella next time to add even more flavour. Thanks!

Really good! Followed the recipe except for adding extra garlic. I think next time I will omit the oil and just leave it with the sundried tomato oil-that would've been plenty! I had extra oil left after loading up the bread so I soaked some smaller pieces of bread in it and made croutons-yummy.

Make the recipe as is !! It really works !!! To make it authentic I used ciabatta bread. Sliced it, brushed the slices of bread lightly with garlic oil, put them under the grill for a few minutes untill crisp. Top with the tomato mix and SLICES of mozzarella (couldn't get grated the first time and the sliced mozzarella turned out GREAT) Fresh Roma tomatoes give a fabulous flavour. This is a no-fail-favourite !!!!

Loved this recipe! I did make it a little easier and spiced it up a bit. I used 2 cans of diced tomatoes with green chilies (drained) in substitution for the 6 romas. It was easier than cutting up the tomatoes and added a little heat to the bruschetta. I plan to add a small can of olives next time for another twist!

Love this recipe. Have made it three times since finding it online... Absolutely great as it is, but decided to try adding a smidgen of anchovy paste to it on the third time. It sent it over the edge from outstanding to sublime!!! Thanks so MUCH for this recipe!!!
