Delicious recipe - appeals to pumpkin fans and cheesecake fans alike! I made this pumpkin cheesecake to bring to my parents' for Thanksgiving, and everyone loved it. I tried to make it slightly lower in fat by replacing the cream cheese with Neufchatel and using a reduced fat graham cracker crust, and it still came out great with an excellent cheesecake taste with just enough pumpkin and spices. This was a very easy recipe to make and I will most likely make it again for future holidays.
