Layers and more layers make this tortilla and bean casserole incredible. It includes three kinds of beans, lots of cheese, and goodies such as jalapeno peppers, cumin, salsa, and sour cream.

I created this one night out of whatever I had on hand that I thought might taste good together--my husband thinks I'm a genius now! We named them 'cigars' because they're shaped like cigars, and if you blow into one end, smoke billows out the other!

These black bean and corn quesadillas are really cheesy, a little bit spicy, and a little bit sweet. My vegetarian husband goes crazy over these every time! Feel free to play around and add chicken or veggies, if you desire. Don't forget the salsa and sour cream!

I usually keep frozen burritos stocked in my freezer just for this recipe. It's so quick and easy, and tastes delicious. Can be served with tortilla chips and a salad. Or double the sauce, and serve over rice.

Southwest cooking at its best. Two different kinds of beans are zipped up with picante sauce, cilantro, garlic and tomato, and then layered between a stack of flour tortillas. Pop into a hot oven and 40 minutes later it emerges - seven layers of delight.

Sauteed sliced artichoke hearts provide a new twist on an old favorite. Cooked black beans are paired up with sauteed artichoke hearts, garlic, and onions, and wrapped up in flour tortillas with shredded sharp Cheddar and diced tomatoes.
