Double-Cheese Eggs Benedict

2 tablespoons butter
2 1/2 tablespoons all-purpose flour
1 1/2 cups milk
1/4 cup shredded Cheddar cheese
2 tablespoons shredded Parmesan cheese
1/2 teaspoon Dijon mustard
1/8 teaspoon salt
1/8 teaspoon white pepper
POACHED EGGS:
1 teaspoon white vinegar
8 cold eggs
4 English muffins, split and toasted
8 slices Canadian bacon, warmed
8 bacon strips, cooked and crumbled

DIRECTIONS
For cheese sauce, in a saucepan, melt butter. Stir in flour until smooth; gradually add the milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat to medium-low. Add the cheese, mustard, salt and pepper, stirring until cheese is melted. Cover and keep warm.
In a skillet with high sides, bring 2-3 in. of water and vinegar to a boil. Reduce heat; simmer gently. For each egg, break the cold eggs into a custard cup or saucer, the hold the dish close to the water surface, slip the egg into the water. Cook 4 eggs at a time, uncovered, for 3-5 minutes or until the whites are completely set and the yolks begin to thicken. With a slotted spoon, remove each egg. Repeat with remaining eggs.
To assemble, top each muffin half with one slice Canadian bacon, one egg, cheese sauce and bacon.

My husband and I have loved this recipe since I first tried it. This weekend we were a little rushed, so I tried something different and it worked out great. For a quick breakfast, I cut up the Canadian bacon and cooked it in some scrambled eggs. I crumbled the bacon into the sauce just before serving. Then I just served it all on some wheat toast. Much quicker to make and just as delicious.

Just made this for my hungry menfolk and what a great hit is was! Only change was that I had cream in the fridge so I used it which made the sauce downright decadent. I have saved it to my recipe box and certainly plan on making it again.

For sure the greatest! Better than any restaurants! It isn't too heavy or rich. It is perfect! This is the first time I have made poached eggs and it was quite easy. I didn't make any changes to the recipe other than cutting the bacon, canadian bacon and muffins in half since it was only my husband and I eating. I will make this again and again probably without any changes to the recipe!

Tasty! I followed the recipe with the exception of leaving out the regular bacon, since we didn't have any on hand. This recipe is easy and has a wonderful flavor. Everyone liked it better than regular benedict sauce, and the bonus is that it's easier to make! Can't wait to make it again. Thanks for this treat!

This is very good! I found the sauce to be just a bit on the bland side, so I add a teaspoon of chicken broth powder and a few dashes of hot sauce. After making this so many times, I leave out the parmesan, and use only canadian bacon for the meat. The white pepper is key in the sauce. I keep forgetting and using regular pepper, but the sauce isn't "just right" until the white pepper is added. I make enough gravy for 5 servings, but enough eggs for 2 people. This is a delicious regular in our house. Thanks for the recipe!

Very good recipe. The sauce is different than a hollandaise, but works very well with the combination. If you are a cheese lover and like eggs benedict, you will like this recipe. I halved the recipe and it worked fine. I've never had a sauce thicken so nicely before. I did mix in a dab of lemon juice to the sauce after mixing in the cheese to make it more like hollandaise, and worked nicely. Thank you for submitting this recipe!
