I used 1 1/2 lb of beef and the amt of green onion and bell pepper was just right. I used an 11 x 9 glass pan and that was perfect too. When I make it again, I will cut the sauce in 1/2; too much of a good thing. Warmed up for leftovers, it was even better than the first time around! I really like this recipe.

What a flashback this was! This is SO much like my mom's meatloaf. It's the green bell pepper that makes this such a winner. Of course, when I was a kid I didn't like it BECAUSE of the bell pepper. Kids, go figure! I fire-roasted my pepper before dicing it. Makes a delicious difference. Also added onion & garlic powders, cayenne, my own blend of seasoned salt, freshly ground black pepper, red pepper flakes and chopped parsely. Used a slice of french bread soaked in milk instead of crackers. Omitted the mushrooms and no need for the soup mix at all. The glaze was wonderful, just like my beloved mother's who recently ascended to heaven. This recipe reminded me of those magical Sunday family dinners. Absolutely delicious and such a lovely memory. Thank you.

Very good, we doubled the portion and used Ritz crackers and extra lean ground beef instead. Also l changed up the sauce and used worsterchire and spices in it instead of ketchup. It turned out great!!

Excellent Recipe...The only thing I changed as instead of the Saltines I used oyster crackers and Rice Krispies together...half and half..Wonderful

This sounds great, very like my own recipe, only I don't put in mushrooms (but maybe I'll try). Another very good tip for a lovely MOIST meatloaf is to put a large bowl of water in the oven when cooking, it will not dissapoint!

This was AWESOME! I used bread crumbs instead because I did not have saltines, added sharp cheddar also. LOVE this meatloaf! Thank you for the recipe!

My family really enjoyed this recipe! I used red peppers instead of green and did not add mushrooms... it was so good that my husband had thirds! The meatloaf was definitely more flavorful than I expected -- a good quick recipe. I served it with the honey roasted red potatoes (recipe from this site) and both were a hit.

We will definitely make this again. However, as much as my kids and myself enjoy ketchup, it was just too much. The kids scraped it off before eating. We don't do mushrooms, I added a little more bell pepper and used butter crackers instead of saltines (didn't have any). If you have picky kids, I'd suggest dicing the veggies until they are almost pureed. They hide better that way! I will probably try to "hide" more veggies next time!
