INGREDIENTS
1/2 cup butter or margarine, melted
3 tablespoons Dijon mustard
1 small onion, chopped
2 garlic cloves, minced
1 tablespoon minced fresh thyme
1/2 teaspoon crushed red pepper flakes
4 boneless, skinless chicken breast halves
1 cup dry bread crumbs

DIRECTIONS
In a bowl, combine the butter, mustard, onion, garlic, thyme and pepper flakes. Dip chicken in butter mixture, then coat with bread crumbs. Place in a greased 11-in. x 7-in. x 2-in. baking dish. Bake, uncovered, at 350 degrees F for 30-35 minutes or until chicken juices run clear.

GOOD~Husband liked it, so that makes it a winner in my book. It was not the most amazing chicken dish but a good thing to make if you want to try something different. In all fairness I altered it a bit; used olive oil instead of melted butter because I had none, dried instead of fresh herbs because it's what I had, and threw everything in the food processer before adding the chicken. Next time I will follow directions exactly as I suspect it would be a little tastier with the melted butter.
