Yummy way to make potatoes. I put the butter rigt into the potatoes when i mash them. I usually freeze half for later.

Nobody wanted to eat my potatoes when they heard that they had cabbage. I talked a few into trying it and they were very surprised at the great taste! Soon everyone had tasted it and all loved it. I followed the directions exactly and will be making this again! Thank you.

A great recipe, and a nice alternative to mashed potatoes- I cut back on the butter quite a bit and it still tasted great!

For years, I've been making a similar recipe handed down by my grandmother, and this recipe never fails to impress. I made this last week for our office St. Paddy's Day potluck and everyone loved it! Most had never heard of Colcannon, but they all wanted the recipe! I even made a vegetarian version without the bacon and got rave reviews from that too. Thanks for keeping up the tradition Diane!

I hunted down this specific recipe a couple months back when I did a Dinner Theme night. I love mashed potatoes, but I wanted something a little different. When I mashed my potatoes, I mashed them with sour cream and butter and plenty of salt. I cut the cooked cabbage into bits and folded it into the mashed potatoes, to give it a variety of textures. This was such a hit that I now make it at least once a month, especially with ham on the side. My husband isn't a fan of cabbage but he raves about these potatoes and never fails to return for seconds or sometimes thirds. Thanks for sharing this recipe!

I took this to an Irish-theme dinner party on Friday and it was a hit, with some tweaks: I used 6 strips of bacon, with an additional 2 strips to crumble on top. Added 2T minced garlic towards end of onion/cabbage step. Definitely use a lid to cook onion/cabbage or cabbage stays too crunchy before it starts to brown. Added 1/2C light sour cream when mashing potatoes. Garnished with chives. Without these changes, even with plenty of salt, this was a little bland. But with them, it was delish!

I had never tasted this dish, so I didn't know what to expect, but it was absolutely amazing! I doubled the bacon, and used 1 cup sour cream in place of the milk (which is how I make mashed potatoes), but other than that, made the recipe exactly as stated. I don't think I will ever be able to eat regular mashed potatoes again! Thank you, Diane!

SUPER excellent! I am officially a fan of cabbage, thanks to this recipe. Of course, in my opinion, bacon makes anything better, so perhaps that had something to do with it. I made the recipe exactly as written, and it turned out perfectly.
