I would have never thought to mix cabbage and mashed taters. Really tasty dish! I didn't put my butter in at the end. I mixed it in with the milk when mashing the potatoes. We had no leftovers (my daughter went back for seconds!)This is a great way to change up your plain ol' mashed potatoes.

Since we're vegan, I left out the milk and bacon and used earth balance instead of butter. However, I added a couple shakes of liquid smoke to impart a smokey flavor similar to that imparted by the omitted bacon. It was delish!

Ohhhh this was good!! I used an immersion blender to blend everything so I could get my kids to eat it without noticing the cabbage (it worked)!! I also subed the milk for half and half! This does make a ton so I after we ate and DH got his lunch for work tomorrow I had enough to freeze for another dinner.

My husband said that this was by far the best mashed potatoes he has ever eaten! I used finely chopped leeks sauteed with the cabbage (also finely chopped) instead of the onion. The leek and cabbage mixture was a little dry while sauteing in the small amount of bacon fat, so instead of adding more fat, I added a little whole milk to moisten while simmering. This worked very well to soften the vegetables. The addition of pepper at the end made a big difference to the taste. Salt was not necessary due to the bacon (I added more bacon than recommended)I fried the bacon until just before it started to crisp up, so it was still soft so that it blended with the other textures when stirred through.

There are so many wonderful reviews for the recipe that I would be only mimicking what most have said but this was delicious! I had been dying to try it and it was very simple. The ONLY change I made was to ADD more bacon because as one reviewer stated "you can never have too much bacon" :) We had it for two days with leftovers and my mother even made her leftover colcannon into potato pancakes for dinner the night after St. Patrick's Day and said it was even better! I did finely shred the cabbage to hide it from my kids and it worked! Thanks for posting!
